The formula, in three parts
Every yield-per-area figure is the product of three numbers, and each one is something you control or measure:
- Dry substrate per square foot of floor. How much substrate your shelving holds once you leave the gaps the mushrooms need to grow into, and the aisle you need to reach them.
- Biological efficiency (BE). Pounds of fresh mushrooms per pound of dry substrate, across all flushes. It depends on species, strain and conditions. The biological efficiency guide covers how to measure it.
- Turns per year. How many times a fruiting shelf is filled with a fresh block and emptied of a spent one. A block that fruits for five weeks turns about ten times a year. One that fruits for twelve turns about four.
Yield per square foot per year = dry substrate per sq ft × BE × turns per year. Quote any one of those alone and the figure means nothing: a high-BE species on slow shelves can produce less per square foot than a modest one that turns over quickly.
Step 1: how much substrate a square foot holds
Take a common wire rack: shelves 48 by 18 inches (6 sq ft each), five tiers. Standard blocks of 4.5 to 5 lb, each carrying about 2 lb of dry substrate, fit around twelve to a shelf with room for clusters to form on the sides. That is 24 lb of dry substrate per shelf, or 4 lb per square foot of shelf.

Bigger bags change the block count, not much else: a 12 lb bag carries about 5 lb dry, and you fit fewer of them to a shelf. Count your own shelf in pounds of dry substrate, not in blocks, and the rest of this page still applies.
Step 2: yield per block
Fresh yield per block is its dry substrate weight times BE, summed over every flush. The BE ranges are the ones published in our fruiting conditions reference.

Step 3: yield per square foot, per turn and per year
Multiply the 10 lb of dry substrate per square foot by BE for the yield of one turn, then by how many turns a year the species allows. The turn lengths below are typical, not fixed: they are the time a block spends on a fruiting shelf from going in fully colonised to coming out spent, and your own will differ.

These are fruiting-room figures at full occupancy. They are the ceiling, and they are the number to use when you are sizing racks. They are not what a farm produces per square foot of building.
Why a whole farm yields far less per square foot
Blocks colonise somewhere else before they fruit, substrate has to be mixed, bagged and sterilised, harvests have to be weighed, chilled and packed, and none of that floor ever grows a mushroom. Racks are never full every day of the year either. A worked example for a small oyster farm:

That whole-farm figure sits close to the roughly 25 lb per square foot a year often quoted for bag-grown oyster farms, which is a useful sanity check: the quoted figure is a whole-building number, and the fruiting room alone does two to three times better.
Species change the shape of the building, not just the total. An oyster block spends about two weeks colonising before it earns a fruiting shelf. A shiitake block spends 35 to 70 days, plus the time to form its brown skin. For every block you start a week, shiitake needs three to five times the incubation space oyster does, which is why a shiitake farm's per-square-foot figure falls further below its fruiting-room figure than an oyster farm's does.
What moves the number most
- Losses. Every contaminated block took up a shelf for its whole turn and produced nothing. A 10% loss rate takes 10% straight off yield per square foot, and it hides inside an average BE if you only average the blocks that fruited.
- Turn length. Pulling a block after its second flush instead of waiting for a weak third often raises yield per square foot even though it lowers yield per block, because the shelf goes back to a fresh block producing at full rate.
- Vertical space. A sixth tier adds a fifth to capacity if your airflow and humidity reach it. If it only reaches the top shelf poorly, that shelf's lower BE eats most of the gain.

How many pounds of mushrooms can you grow per square foot?
In the fruiting room, oyster mushrooms on a five-tier rack give roughly 7.5 to 10 lb per square foot of floor each time the racks turn over, which comes to about 75 to 100 lb a year at full occupancy. Across a whole farm the figure is much lower, around 31 lb per square foot of total floor a year in the worked example on this page, because incubation, prep, packing and walkways use floor that never fruits.
How much does one mushroom block yield?
A block yields its dry substrate weight multiplied by the biological efficiency. A typical 4.5 to 5 lb block carries about 2 lb of dry substrate, so oyster at 75 to 100% BE gives 1.5 to 2 lb of fresh mushrooms across all its flushes, lion's mane and king oyster at 50 to 75% give 1 to 1.5 lb, and shiitake at 75 to 125% gives 1.5 to 2.5 lb. A larger bag of around 12 lb carries about 5 lb dry and yields two and a half times as much.
Why is shiitake yield per square foot lower than oyster when its BE is higher?
Because a shiitake block occupies a fruiting shelf for around twelve weeks, with a rest and a cold soak before each of its three or four flushes, while an oyster block is done in about five. Per block, shiitake yields as much or more. Per square foot per year, the oyster shelf turns over about ten times and the shiitake shelf about four, so the oyster shelf produces roughly twice as much. Shiitake also needs far more incubation space, since each block spends 35 to 70 days colonising before it can fruit.
